I'd suggest using an altered version of the design found in the old tumbler set(Joker's Ice Cream Surprise).

It's relatively simple and quite good.

It wasn't originally an Ice cream truck, it was a hippie van that I was making, and then stick man44 started turning it into an ice cream truck. I'll post pictures as soon as We make a big Ice cream on top
